Roasting acorn squash is super easy and delicious. It was one of my favorite fall treats when I was a kid and is still a favorite today. Acorn squash is a low calorie, fiber-full carb packed with vitamin C, potassium and magnesium. If you are on a budget, is also inexpensive!

To make it just the same as I do, purchase smaller ones so they are perfect for individual servings. Follow the basic roasting instructions, but before sliding them into the oven, add a pat of butter, a teaspoon of maple syrup, a tablespoon of dried cranberries and a sprinkle of salt to each half. When they are done, you can mix them up on your plate right in the shell.
